Coffee is an evergreen tree of the Rubiaceae Coffea genus. Coffea is currently categorized into more than 100 species, but only two of these species are common around the world: Coffea Arabica and Coffea Canephora (Coffea Robusta). Arabica accounts for around 60% of the world's coffee production, and is widely consumed around the world. Canephora (Robusta) has a very pungent bitterness, so it is widely used in blends of coffee combined with Arabica or in processed drinks such as instant coffee.
